This coffee comes from farmer Argemiro Hernández Orjuela, who grows it in the highlands above Ibagué in the Tolima region of Colombia, at elevations over 5,700 feet. The Wush Wush variety traces its roots to Ethiopia and is one of the rarest in specialty coffee, known for how little it yields and how particular it is to grow. It thrives only in specific conditions, requiring high altitudes, rich volcanic soils, and close, careful attention throughout the season. Tolima's mountain microclimate gives the plant an ideal setting to develop, but its delicate nature means only small quantities can be harvested each year. Each cherry is handpicked and processed with a semi-washed method and a long, controlled fermentation.
