This coffee comes from farmer Argemiro Hernández Orjuela, grown in the highlands above Ibagué in the Tolima region of Colombia, at elevations over 5,700 feet. Gesha is one of the most sought-after varieties in specialty coffee, prized as much for its scarcity as for its cup. It is demanding to grow, thriving only at high altitude in the right microclimate, and the trees produce far lower yields than more common varieties. In Tolima's volcanic soils, with the right balance of rainfall, shade, and elevation, the plant develops the complexity it is known for. Each harvest is slow and selective, with only the ripest cherries picked by hand, then processed using a semi-washed method that leaves part of the fruit's mucilage on the bean as it dries. Only a handful of producers can grow Gesha under these conditions, and each harvest yields just a small quantity.
