This coffee comes from José Giraldo, a third-generation farmer in Colombia's coffee country. José took over his family's farm after years of conventional production had pushed it to the edge, and over the past decade he has rebuilt it into a center for genetic research and specialty coffee. Working alongside his wife, María Rivera, he reworked everything from the varieties they plant to the way each lot is fermented and dried. The Pink Bourbon cherries are grown by trusted partner farmers in the Huila region and processed at José's El Danubio facility, where his methods have earned recognition from roasters and competitions around the world.

José Giraldo was called home from Bogotá to save his family's farm, El Danubio, and turned it into a center for genetic research. With his wife María Rivera he then established Las Marías higher up the mountains of Pijao, Quindío — a third-generation estate spread over 23 hectares. Its ground holds some of the rarest genetics in coffee: 9,000 Typica trees over seventy years old, three generations of Geisha grown from selected seed, 12,000 Orange Striped Wush Wush and 3,500 micro Mokka.
